The Holiday Glow - All the pomp, none of the hangover

A few months ago I reached out to The Mindful Mocktail.   I had followed her for a while just in awe of the most beautiful non-alcoholic drinks she made.  I sent her a message and crossed my fingers for a response.  I was hopeful she could make a super tasty and beautiful drink using Katy Elderberry syrup. I wanted something that would transcend Thanksgiving and Christmas and would just bring you joy while you sip. 

To my surprise she quickly replied and off we went.  I shipped a bottle of elderberry to Australia, figured out time zones really quickly when replying to emails and waited for the final recipe.  

I could not be more thrilled with this drink! It's so yummy, and has too many health benefits to count!

Ingredients

Pomegranate juice: if you can source an organic juice this is ideal. Not only is it better for you, but it also keeps its deep red color, making it perfect for a festive mocktails. Hint: you can use cranberry juice in place of pomegranate if you wish.

Orange juice: fresh or bottled work just fine.

Lemon juice: I always prefer fresh citrus in mocktails and I am yet to find a bottled lemon juice I really love. If you have one you love – go for it!

Katy Elderberry Syrup: the star of the show really is the organic elderberry syrup with honey. It tastes divine and is designed to support immune health thanks to its antioxidant content.

Ginger beer: this is an optional ingredient and pairs perfectly with the pomegranate and elderberry for a sparkling mocktail.

 

Equipment

This recipe is so simple, it doesn’t require a lot of tools at all. I recommend:

A shaker: if you don’t have a mocktail shaker, just use anything with a tight lid. A mason jar or drink bottle both work a treat!

Glassware: I recommend something with gold if you’re making this for Thanksgiving or Christmas, but really any medium-sized tumbler will work. This would also look just stunning in a wine glass!

Something to measure: a jigger is perfect for this, but if you don’t have one, just use regular measuring spoons or cups.

Recipe Card Details

Ingredients

3 oz (90 ml) pomegranate juice

1 oz (30 ml) orange

1 oz (30 ml) lemon juice

1/2 oz (15 ml) organic elderberry syrup

1/2 oz (15 ml) maple syrup (optional)

For a sparkling mocktail: add 1-2 oz (30-60ml) ginger beer

Optional Garnishes

Cinnamon sugar for rim

Your choice of dehydrated orange, pomegranate arils and/or thyme

Method

To make the optional cinnamon sugar rim: place one teaspoon of white or raw sugar and 1/8 (a small pinch) of ground cinnamon onto a shallow plate. Mix with a spoon or your fingers until the color looks even. Rim your glass with maple syrup or lemon juice, then dip it gently into the mix. Shake off any excess.

To make the mocktail: 

Add the pomegranate juice, orange juice, lemon juice and elderberry syrup to a shaker with a few cubes of ice. Shake well until combined. Strain over fresh ice. 

You can leave as is for a still mocktail, or top with ginger beer and stir gently for a sparkling mocktail.

Garnish with your choice of orange, pomegranate or thyme.
